Kitty's Chocolate chunk cookies!




Here is the recipe inspired by Lara Jean from the series To All the Boys I’ve Loved Before, but named after her impatient little sister Kitty!

Kitty's Chocolate chunk cookies-

Yields 3 dz cookies depending on your scoop!
I used a 1/2 oz cookie scoop

Ingredients 
  • 8 tablespoons of unsalted butter softened
  • ½ cup white sugar
  • ½ cup packed light brown sugar
  • 2 teaspoons vanilla
  • 1/8 tsp cinnamon (Optional)
  • 1 egg
  • 1½ cups all purpose flour 
  • ½ teaspoon baking soda
  • ¼ teaspoon salt 
  • 2 cups chocolate wafers/discs (Semi Sweet chocolate baking bar/ rough chopped  or chocolate chips can also be used)

Tools
3 sheet pans
Parchment paper.(Optional, but do NOT use aluminum foil. You may place the cookies directly on to the pan and they will not stick.)
1/2 oz cookie scooper or regular soup spoon (if using spoon make sure all cookies are the same size)
Spatula
Cooling racks 

Directions

Preheat oven 375°
Measure out all ingredients and set aside.
In a stand mixer (Hand mixer can be used) at medium speed cream butter and sugars.
Once light and fluffy (about 3-5 min) turn mixer to low and mix in egg vanilla and cinnamon just until combined.
On the same low speed, add the dry ingredients JUST until incorporated.
Once dry ingredients are mixed in, add chocolate by hand with spoon or spatula.
We used a small 1/2 oz cookie scooper (using a scooper allows them all to bake evenly) and placed 6-8 cookie scoops directly on a cookie sheet. I do this so the cookies get a crisp bottom and chewie center.
You do NOT need to spray the pans, but can use parchment paper.
Bake for 9 minutes. The tops will be light not brown in color I promise they won’t be raw.
DO NOT move the cookies. Let them cool for 5-8 min on the pan before transferring to cooling rack, otherwise the cookie will break. (LOTS of chocolate remember? Ha!)
