Little Rebel Blueberry & Lemon Cookies!
Little Rebel Blueberry & lemon cookies
- 1 cup sugar
- ½ cup butter, softened
- 4 oz cream cheese
- 1 egg
- 1 teaspoon fresh lemon juice
- 1 teaspoon vanilla
- 1/2 teaspoon lemon zest
- 2 cups All purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 pint of fresh blueberries (washed)
- Lemon Glaze:
- 1 ¼ cup powdered sug
- 1 Tablespoon Lemon Juice
- 1 ½Tablespoons Milk
- ½ teaspoon clear vanilla extract
- 1 drop purple food coloring
- zest of one lemon
Directions
- Preheat oven to 350 degrees.
- Line a cookie sheet with parchment paper or lightly spray with cooking spray.
- At medium speed in a stand mixer cream sugar, butter, and cream cheese until light.
- Add in egg,zest,lemon juice,vanilla and beat until incorporated.
- Add flour, baking soda, baking powder, and salt to the butter mixture and beat on medium just until incorporated.
- WITH HANDS fold in fresh blueberries into dough
- Small 1 Tblsp cookie scooper was used to place dough on cookie sheet.
- Bake for 13 minutes. Let cool on a wire rack for 5 minutes.
- For the glaze, whisk together the powdered sugar, lemon juice, milk, vanilla,food coloring and zest.Pipe or drizzle on top of cookies.
