Half Pint's S'mores Cookies
S'mores cookies:
- 2 sticks unsalted,softened
- ½ cup powdered sugar
- ¼ cup brown sugar
- 2 cups all purpose flour
- ½ cup original graham crackers finely crushed
- ½ tsp baking powder
- 1/2 tsp cinnamon
- ½ tsp salt
- 2 Tbsp milk
- 1 ½-2 cups marshmallow spread
Two cookie sheets
Parchment paper
3 inch Cookie cutters of your liking
Chocolate coating:
- 1/2 cup coating chocolate
- Or
- 8 oz semisweet chocolate chopped and 2 Tblsp vegetable oil
Let the cookie party begin-
- Cream the butter and sugars until light and pale.
- In a another bowl,mix the dry ingredients.Slowly mix dry ingredients in with the butter mix. Add milk a little bit at a time, mixing until a ball of dough is formed.
- Form the dough into a disk, wrap in plastic wrap and refrigerate for 30-40minutes or freeze for 15-20 minutes.
- Preheat oven to 350ºF.
- Divide the dough in half and place on well-floured work surface.place the other half in the refrigerator.
- Sprinkle flour on top of dough and roll out to about ¼-inch thickness. Using your cookie cutter, cut out 6 cookies, re-roll scraps and get 1 -2 more. Repeat with other half of dough in fridge.
- Place on a parchment-lined baking tray, and bake for 10–12 minutes.Cool for 10 minutes.
- To assemble s'mores pies: Pipe with piping bag or spread 2 tablespoons of marshmallow fluff into the center of a cookie. Top with a second cookie and press down. Repeat with remaining cookies.Then place in freezer.This will help the chocolate seize faster.
- For the chocolate coating: Melt chocolate coating in microwave 15 seconds at a time. If you are using semisweet chocolate,add the chocolate and oil and melt over a double boiler. Allow to cool slightly.
- Using two forks, dip each cookie sandwich into chocolate and flip to coat. Place on a parchment lined baking sheet and set aside until chocolate has set.
