French Baguettes


Yields 2 small baguettes 


Ingredients:

3 cups bread flour Or All purpose flour

1 ½ cups warm water plus 2 Tablespoons 

¼ tsp. dry active yeast

½ tsp. salt


Directions:


1. Mix all the ingredients in a bowl.


2. Cover and place in a warm place to rise for 12-18 hours. Don’t mess with it. TRUST ME IT’S WORTH IT.


3. Carefully scoop out the sticky dough on to a heavily floured surface.


4  Divide dough into two pieces.


5. Get your cookie sheet sprayed with non stick spray or parchment paper.


6. Stretch out your first piece of dough to length of your pan (this is to see how long your baguettes should be as this is what you’ll be baking them on.) and then pinch the seams of the dough. (See video below, great tutorial at 40 seconds into the video)

Do the same with the second piece of dough.


7. Place the baguettes seam side down (so the smooth part is facing you) on your cookie sheet and tuck in the the baguette sides so they are both uniform.


8. Score your bread (slash with a sharp serrated knife) 4-5 times.


9. Preheat your oven to 550°.


10. Let your dough rest for 20 minutes.


11. Place ice in a small pan right before putting in your pan to bake.


12  Bake your bread for 20-21 minutes. They will be golden brown and once you tap the bottom will make a hollow sound.
