“Samoas cookie” Cake




Samoas cookie cake

1/2 cup unsalted butter room temperature
2 large eggs 
2 tsp vanilla extract
1 cup granulated sugar
1 1/2 cups all purpose flour
1 1/2 tsp baking powder 
1/2 tsp salt
1/8 tsp ground cinnamon
1 cup buttermilk or make your own-1 Tablespoon vinegar and 1 cup milk.

Caramel:
1/2 stick unsalted butter
1/2 brown sugar
1/4 tsp sea salt

Garnish:
1/2 toasted coconut


Caramel directions:
Add all ingredients into small sauce pan and cook until sugar has dissolved 3-5 minutes over medium heat.
Set aside off heat.

Cake Directions:

1. Preheat oven to 350°
2. Grease two 8” pans.
4. Pour caramel into one of the cake pans.
3. Mix the dry ingredients
4. Cream butter,vanilla extract and sugar for 5 minutes on medium high speed.
5. Mix eggs in a small bowl and then slowly add to mixing bowl.Mix for 3 min on medium speed.
6. Alternate adding flour mixture and buttermilk.
7. Start with the flour mixture (Add in 3 additions and add buttermilk in 2 additions)beginning and ending with flour. Mix well after each addition on medium speed.
8. When you add the last addition of flour mix ONLY until just combined. Don’t over mix it.
9. Pour batter evenly into prepared pans.
10. Bake for 20-25 min.
11. Let them cool 2-5 minutes.
12. Place the caramel topped cake layer on cake platter first.The assemble with chocolate buttercream and garnish with toasted coconut
