A fluffy and deliciously tasty cake!



Cinnamon Toast Crunch cake

1/2 cup unsalted butter room temperature
2 large eggs 
2 tsp vanilla extract
1 cup granulated sugar
1 1/2 cups all purpose flour
1 1/2 tsp baking powder 
1/2 tsp salt
3/4 tsp ground cinnamon
1 cup buttermilk or make your own-1 Tablespoon vinegar and 1 cup milk.

Garnish:
3/4 cup crushed Cinnamon Toast Crunch Cereal
Directions:

1. Preheat oven to 350°
2. Grease two 8” pans.
3. Mix the dry ingredients
4. Cream butter,vanilla extract and sugar for 5 minutes on medium high speed.
5. Mix eggs in a small bowl and then slowly add to mixing bowl.Mix for 3 min on medium speed.
6. Alternate adding flour mixture and buttermilk.
7. Start with the flour mixture (Add in 3 additions and add buttermilk in 2 additions)beginning and ending with flour. Mix well after each addition on medium speed.
8. When you add the last addition of flour mix ONLY until just combined. Don’t over mix it.
Bake for 20-25 min.
9. Let them cool and then assemble with buttercream and garnish with crushed cereal


Honey cinnamon buttercream


2 1/2 sticks unsalted butter, room temperature
1½ teaspoon ground cinnamon
¾ teaspoon salt
2 cups confectioners’ sugar
¼ cup honey
.


Mix all ingredients with whip attachment and mix until light and fluffy.
