Upside Down Turtle Cake


1- 3/4 cup Sugar
1- 3/4 cup All purpose Flour
3/4 cup Dark cocoa powder
1 -1/2 tsp baking powder
1 - 1/2 tsp baking soda
1/4 tsp salt
2 eggs
1 cup milk

2 Tblsp strong brewed coffee
1 tsp vanilla extract
1/2 cup vegetable oil
1 cup hotest tap water or microwave it for 1 minute
OR
1 cup fresh hot coffee for dark chocolate mocha cake
1/2 cup melted butter divided into two
1 cup Brown Sugar divided into two
1/2 cup roughly chopped pecans 


Directions

1. Pre-heat oven to 350 degrees.Grease 2-8” round cake pans.
2. Sift flour and stir in sugar,cocoa baking powder baking soda,& salt in mixing bowl.
3. Add eggs on at a time,milk oil and coffee, beat on medium speed 4 minutes.
4. Slowly add in in boiling water(heat water on stove or in microwave).
CALM DOWN batter will be THIN :)
5. Pour 1/4 cup of the melted butter into each pan. Then sprinkle 1/2 a cup of brown sugar into each pan then top with 1/4 cup of roughly  chopped pecans into each pan.
6. Pour batter slowly into each pan
7. Bake 2- 8 inch pans for 30 minutes

I garnished with some left over homemade caramel (store bought is fine) and pecans.

Cool for 10-20 minutes. They must be completely cooled before cutting.
