Hey puddin’ cake!
Ingredients
• 4 Large Eggs
• ⅔ cup Buttermilk
“Cake mix”
• 2¼ cups All purpose flour
• 1½ cups Granulated sugar
• 2 teaspoons Baking powder
• ½ teaspoon Salt
• 1 cup (equals 2 sticks) Unsalted butter softened
• 2 Tablespoons Vegetable oil
• 1 box (3.9 oz) Instant Cheesecake Pudding Mix (any flavor)
Instructions
1. Preheat oven to 350 degrees.
2. In a small bowl, whisk together eggs,buttermilk and oil.
3 . Cream the butter and “cake mix” on medium speed for 2 minutes in stand mixer.Continue to beat until it looks like crumbled mixture.(see pic)
4. Add half of the buttermilk mixture and beat the batter until fluffy for about 3-5 minutes. Add remaining buttermilk mixture and pudding.
5. Mix for a minute until just mixed.Do NOT overmix.Batter will be thick.

6. Spread into greased pans and smooth tops.
7. Bake 8” round cake pans for 30-35 minutes.
8. Allow cakes to cool.Frost and enjoy!
