Sky High Biscuits
Adapted from Cooking maniac's "Grandma's Flaky Buttermilk Biscuits"

Ingredients
2 1/2 cups All Purpose flour, plus more for rolling dough
2 Tblsp Baking Powder
1 Tsp granulated sugar
1 Tsp Kosher salt
1 Stick of cold salted butter
1 cup buttermilk (If buttermilk is not available just add 1 Tblsp vinegar to 1 cup of milk)
2 Tblsp unsalted butter (I used softened butter to smear on top of the biscuits before baking)


Instructions

Preheat oven to 425 degrees
Sift all dry ingredients into a bowl then dump them in a food processor
Add cut up cold butter to processor
Pulse mixture 6 times no chunks of butter will be visible
Return butter/flour mixture to bowl
Add buttermilk to flour/butter mixture with fork just until it forms a sticky ball
Turn the dough onto floured surface
Roll it into a rectangle about an inch thick
Fold it onto itself and roll it out into a rough one inch thick rectangle again
Do this six times
Cut dough with circle cutter or floured glass.Do NOT twist when cutting biscuits
If you have left over scraps, gently pull together and cut out more biscuits
Bake on baking sheet/cookie sheet for 10-15 minutes

Yields 6 biscuits
